Vegetarian burger with eggplant

for 4 people

Ingredients

1 eggplant-1 cm. cut into thick slices
1-2 pieces of tomato, thick sliced
2-3 tablespoons of olive oil
Salt and freshly ground pepper
8 big brown mushrooms
4 bread sandwiches
1 in case of avocado-mash
Arugula leaves
For bitter peppered mayonnaise:
250 ml. mayonnaise
10 ml. hot pepper sauce
Lime juice according to taste

Preparation 

Apply olive oil on both sides of the eggplant slices. Cook in a grill pan or under a grill of a preheated oven until both sides are brown. Fry the tomato slices in olive oil and season with salt and pepper. Then add the mushrooms and fry until cooked. Mix the ingredients for hot pepper mayonnaise and prepare the sauce. Cut the bread you love into two. Put the arugula leaves, crushed avocado, eggplant and tomato slices, mushrooms. Finally, prepare the mayonnaise on the inner material.
