Chocolate is something nice. So what could be better than baking a vegan brownie cake? The cake was zero comma swept and was also good for non-vegans. I glazed the cake with chocolate afterwards. But you can enjoy the chocolate banana cake without chocolate glaze. I could well imagine adding walnuts next time. Tastes pretty good too.
300 g spelled flour
120 g of coconut blossom sugar
4 teaspoons raw cocoa
2 teaspoons of vanilla sugar
1 pinch of salt
2 teaspoons of baking soda
100 ml rapeseed oil
250 ml of oatmeal
Mix the dry ingredients in a bowl. Peel banana and crush with a fork. Add the bananas, rapeseed oil and oatmeal to the remaining ingredients and use a hand mixer to make a smooth dough. Grease a small cake tin and dust with flour.
I have taken a small Gugelhupfform. You can also use a round or box shape. Put the dough into the cake pan and bake at 180 degrees in a preheated oven for about 40 – 50 minutes. If the dough is too dark then it is best to cover it with a piece of aluminum foil.
