This is the name of the dish we have chosen for you; Vegan Black Bean Burger Patties and Tofu.
We were recently invited to a spontaneous barbecue event with my sister and I realized once again how much I like barbecues (or old-fashioned: barbecues). Alone all the aromas in the air keep my mouth watering. Are you feeling the same? Today I have a vegan alternative for Burger Patties aka Bouletten aka Meatballs for you. Mega delicious and packed with vegetable protein! yummy 🙂
Ingredients
for about 10 patties
265 gr black beans (cooked, if necessary from the tin -> drained weight)
200 gr tofu nature
1 tbsp tapioca starch (I recommend tapioca, alternatively you could also use cornflour)
1 tsp of Harissa paste
1 tbsp Dijon mustard
1 tablespoon of chopped herbs (such as parsley, chives, tarragon …)
2 spring onions (small cut)
30 grams of celery (small diced)
4 grams of flax seed, crushed
10 gr sunflower seeds
Sea salt, black pepper
1/2 teaspoon chilli flakes
1 csp caraway, ground
optional: 1 garlic clove or garlic powder
Vegan Black Bean Burger Patties and Tofu
Preparation
Drain the black beans in a sieve, squeeze the tofu lightly with your hands (-> water out!) And crumble in a large bowl with your hands. Add beans and mix well until a proper dough is formed. This works well with a fork or with your hands. If necessary, it is synonymous with a good blender. I deliberately left small pieces in it, which gives a nice consistency.
Remove the sliced onions, garlic, celery, linseed, sunflower seeds and mustard. Finally, add the spices and herbs, season with salt and pepper and mix everything well and knead.
Finally, add the tapioca starch to the dough (possibly seven) and mix everything well again. With damp hands form about ten balls and gently press flat.
