Tray Kebab

The traditional Tray Kebab of Antep cuisine is both a great taste for your special occasion.

350 gr minced meat
4 cups thin wheat
2 tablespoons flour
1 onion
2 tablespoons of red ground pepper
1 teaspoon salt
1 teaspoon black pepper
30 g butter

For internal mortar
• 500 g fat meat grinder
• 3 onions
• 30 g butter
• 1 glass of walnut
• Half a glass of pistachio
• Salt
• Black pepper
• Allspice

For the above

• Finely chopped parsley

Preparation
Knead the raw meatballs, thin bulgur, flour, grated onion, red pepper, salt and pepper in a bowl and knead well until the meatballs are mixed. For the inner mortar of meatballs, peel the onions’ crust. Sauté the mince in the butter. Add onion and continue to sauté. Sweeten with black pepper and allspice. Add the ground beef and pistachios. Allow the mortar to heat. Release the half of the meatballs with a hand on a 30-35 cm diameter tray that you lightly lubricate. Add the inner mortar and fix it with the reverse of the spoon. Flatten the remaining bulgurlu mortar with the opposite side of the spoon, press it with your hand. Cut a sharp knife in a cold water and cut the kebab in the tray. Melt the butter and rub it over the meatball. Pre-heated 200 degrees in the oven for 30-35 minutes. After the kebab is soft, sprinkle with a little water and cover the top of the tray. Garnish with finely chopped parsley and serve hot.
