Toffee Filled Chocolate Christmas Cookie

This is the name of the dish we have chosen for you; Toffee Filled Chocolate Christmas Cookie.

Ingredients

For 22 pieces

75 g of butter
100 g dark chocolate
125 g of flour
225 g brown sugar
50 g of cocoa powder
1 packet of Bourbon vanilla sugar
1 pinch of salt
2 level (t) baking powder
3 eggs (size M)
350 g soft caramel candies
500 g of whipped cream
2 sachets of cream firm
50 g of bittersweet chocolate
30 g of hazelnut kernels

Preparation

Melt the butter and allow to cool slightly. Finely chop the chocolate. Mix flour, sugar, cocoa, vanilla sugar, salt and baking powder in a bowl

Place the eggs in a mixing bowl and whip with the whisk of the hand mixer. Add butter slowly and stir. Stir in flour mixture with the whisk of the hand mixer, adding chocolate at the end

Place about 44 small piles (mountains) on a baking tray (about 34 x 41 cm) lined with parchment paper with a tablespoon. Leave space between the piles as they diverge when baking. Bake one sheet at a time in the preheated oven, middle rack (cooker: 200 ° C / circulating air: 175 ° C / gas: stage 3) bake for approx. 10 minutes

Remove from the oven, allow to cool on the plates, as they are still soft. Then carefully remove from the baking paper, place on a wire rack and allow to cool

Chop 300 g of caramel sweets and place in a saucepan with the cream. Bring to a boil while stirring (dissolve the caramel) and simmer for about 10 minutes. Put the toffee cream in a mixing bowl and let it cool down. Approximately Refrigerate for 2 hours

Finely chop 50 g of caramel sweets. Halve the toffee cream and whip up creamy. In each case 1 packet of cream fixer trickle. Add chopped caramel sweets. Put the toffee cream in a piping bag with a large hole and spray spirally onto the smooth underside of 22 whoopies. Put remaining Whoopies on the lid and leave to cool for at least 30 minutes

Coarsely chop couverture and melt over a warm water bath. Allow to cool slightly. Roughly chop hazelnuts. Put a small dab of couverture on each Whoopie and sprinkle with chopped hazelnuts. Refrigerate until served.
