Tahini Creme Brulee

The most beautiful of the Creme Brulee:  Tahini Creme Brulee.

Ingredients

4 servings

300 ml cream
150 ml of milk
75 g of fine, white sugar
4 fresh egg yolks
2 teaspoons tahini (sesame paste)
4 heaped teaspoon fine, white sugar (to burn)

Preparation

Open the four eggs, separate and place the yolks in a mixing bowl
(tip: the egg whites you can use great to bake meringues, or freeze to the next use)
Add the milk, cream, tahini and 75 grams of sugar to the egg yolks and stir well with the whisk
Preheat the oven to 120 degrees, place four ovenproof dishes in a grease pan or casserole dish and place in the oven
then pour enough warm water into the casserole dish or fat pan, so that the cakes are 2/3 in the water
Carefully pour the tahini-cream mixture into the tin and bake in the oven for about 50-60 minutes, then allow to cool and then refrigerate for another 4 hours
Just before serving, spread a teaspoon of sugar on the cream, and flame it with a Bunsen burner
