Fennel is the guarantor of particularly fine dishes in Italy and France and is full of vital nutrients such as potassium, iron, vitamins A, B and C. To crown this low carb specialty, prepare a delicious lemon butter and your dinner will be perfect!

Ingredients

For the cod

300 g cod fillet
2 tablespoons olive oil
1 pinch (s) of salt
For the fennel
2 fennel tubers
2 tablespoons vegetable oil
1 teaspoon of butter
1/2 organic lemon
Salt pepper
For the lemon butter
1/2 organic lemon
100 g of butter
1 pinch (s) of salt
Special accessories
Sous-Vide stick
vacuum sealer
vacuum bags

Preparation

For the cod, fill a large pot 3/4 full with water. Set the sous vide stick to 56 ° C, attach to the pot and heat up the water.

Rinse cod fillet and pat dry. Rub with olive oil, season with salt, vacuum in a vacuum bag. Cook for at least 40 minutes in tempered water.

For the fennel wash tubers and cut along with green in thin slices. Heat the oil in a pan, sauté the fennel slices for about 2 minutes from both sides, turning them over and over. After half of the time add butter, season with salt and pepper. Squeeze out the lemon, remove the fennel from the pan, drizzle with a little lemon juice, lay out on a plate and keep warm in the oven.

For the lemon butter, rub the lemon peel, squeeze out the juice. Melt the butter in the pan and brown over medium heat with constant stirring. Stir in the lemon rind and juice and remove from the heat. Pour warm butter through a fine sieve and catch.

Remove the cod from the vacuum bag, drain on kitchen paper and place on the fennel. Season with salt and pepper, drizzle with lemon butter and serve with lemon slices if necessary.
