The classic soft cheese roll as a topping to a crispy salad is a delicious-seductive combination. A noble dressing consisting of champagne vinegar, chili, olive oil and fresh garden herbs completes this eye-catcher on the buffet table.
ingredients for 4 persons
2 cans (400 ml each) of white bean kernels
2 big red onions
2 small novita salads (each about 200 g)
2 small radicchio salads (approx. 150g each)
4 packs (à 150 g) of soft cheese roll, for example Chavroux
2 small chili peppers
2 cloves of garlic
6 tablespoons of champagne vinegar
2 knife tips vegetable broth powder
8 tbsp olive oil
4 tablespoons chopped
Herbs (parsley, thyme, rosemary)
Drain beans and drain well. Peel and chop the onions. Clean the peppers, cut into quarters and cut into thin strips. Clean the lettuce, wash, drain and disassemble into bite-sized pieces. Clean radicchio and cut into thin strips. Slice soft cheese rolls. Cut chili peppers, remove seeds, peel garlic and finely chop them.
Add 8 tablespoons of hot water, vinegar, broth, oil and herbs, stir to a marinade. Mix beans, onions and peppers with 2/3 of the dressing and leave for 20 minutes, season to taste. Decorate the bean salad with the two types of lettuce and the Chavroux soft cheese rolls. Drizzle with the rest of the dressing.
