Unique, traditional Turkish / Black Sea flavor: Rice with anchovies.
Anchovy is the most delicious and omega-3 rich fish of the Black Sea. If you find now is the time period of anchovy.
• 2 cups of rice
• 1 onion
• 1 tablespoon stuffed peanuts
• 1 tea cup of olive oil
• 1 tablespoon currants
• 1 teaspoon powder sugar
• 1 kg cleared anchovies
For the above:
Take the rice in a bowl. Add enough water to pass over and leave for 20 minutes. Sauté the onion and peanuts in olive oil for a few minutes. When the peanuts begin to turn slightly, add the rice that you filter. Stir continuously until the rice is clear. Add 3-3.5 cups of water, currants, powdered sugar and salt and cook on medium heat. Add allspice and cinnamon and mix.
Half of the anchovies, the tails in, closed in a round oven to lightly lined in the form of a circular furnace. Spread the rice over the anchovies. Sort the remaining anchovy on the pilaf. Cook in pre-heated 180 degrees oven for 25-30 minutes, turn over into a serving plate and garnish with finely chopped chives and serve hot.
