300 g quinoa
2 bunch of rocket (about 150 g)
100 g hazelnut kernels
140 g of solid goat cream cheese
2 tablespoons of lemon juice
4 tablespoons mild olive oil
4 tsp of liquid honey
Quinoa Salad with Goat Cheese
Rinse quinoa in a strainer under hot water until it stays clear. Then put in a saucepan and cook according to the package instructions in salted water. In the meantime, wash the rocket and spin dry. Roughly chop hazelnuts. Crumble the goat’s cheese. Mix quinoa with lemon juice and olive oil and season with salt and pepper.
Mix quinoa, rocket, hazelnuts and goat’s cheese, spread on 4 plates and drizzle with 1 teaspoon of honey.
