This is the name of the dish we have chosen for you; Quinoa and Leek Soup with Chickpeas.
Ingredients
Half a cup of olive oil
2 medium carrots (chopped)
500 g leek (finely chopped)
Salt, pepper, chili pepper
Boiled chickpeas in 1 cup
2 tablespoons of red quinoa
200 g yogurt
1 egg yolk
1 tablespoon of butter
Preparation
Add half of the olive oil in the saucepan and add the carrots and leeks that you cut in the shape of a ring. Roast 5 minutes.
Add salt, spice, quinoa, chickpea and 5 cups of hot water. Leave to boil.
After 15 minutes, knead in a separate place at room temperature and mix the egg yolk thoroughly. Take 3-4 tablespoons of boiling soup and add to the yogurt mixture. Mix well. Pour the yogurt mixture slowly into the boiling soup (don’t forget to mix the soup). Boil for another 1-2 minutes and take it from the stove and serve as hot.
