Potato Pancakes with Applesauce

This is the name of the dish we have chosen for you; Potato Pancakes with Applesauce.

These Potato Pancakes not only look very nice, they are by the preparation in a waffle iron also very low in fat. Homemade applesauce tastes deliciously fresh. A cheap meal that is best prepared for 2 people.

Ingredients for applesauce

1 kg of sour apples
1 organic lemon
1 small cinnamon stick
50 ml of water
60 g of homemade vanilla sugar (if not available, white sugar)

Ingredients for potato pancakes 

800 g of firm potato
80 g of chickpea flour
Pepper from the grinder
Rapeseed oil for brushing

Potato Pancakes with Applesauce

Preparation

Peel apples, remove core house, cut into pieces. Wash and squeeze the lemon. Bring the apples, lemon juice and 1/4 of the lemon zest, vanilla sugar, cinnamon stick and water to a boil. Reduce heat and simmer for 15 minutes. Remove cinnamon and lemon peel and puree everything with the blender to applesauce

Peel the potato and then grate. Mix with the chickpea flour, add salt and a little pepper.
Brush the waffle iron with the oil. Put 1/4 of the potato mixture in the waffle iron and bake for about 10 minutes (depending on the type – you have to try it yourself). Continue with the rest of the mass.
