Paleo pizza with sweet potato and kale

Paleo can be as tasty and creative: crunchy dough – without any grains – meets sweet potato puree, kale and caramelised onions. Try it out!

Ingredients

80 g almond flour
100 g tapioca or potato starch
1 egg white
1 tablespoon of olive oil
1 1/2 teaspoons of apple cider vinegar
1 tablespoon of honey
1 tablespoon of yeast
1 teaspoon of sea salt
60 ml of water (lukewarm)
For covering
1 sweet potato
1 onion
60 g of kale
100 g Fontina (or another spicy hard cheese)
3 tablespoons cream
1 tablespoon of fresh sage (chopped)
1 tablespoon of olive oil
Salt pepper

Preparation

For the pizza dough mix in a bowl of honey, yeast and water and leave to stand for about 5 minutes until the mixture foams slightly. In a large bowl, mix almond flour, starch and salt. Add olive oil, apple cider vinegar and egg whites and mix with a little flour. Add water-yeast mix to the dough gradually.

The dough should be stickier and not as compact as ordinary pizza dough. Cover bowl with foil and let it rise at room temperature for about 1 1/2 hours.

Preheat the oven to 200 ° C. Pierce sweet potato several times with a fork and bake in the oven for about 45 minutes until soft.

In the meantime, halve onion and cut into small crescents. Heat oil in a pan at low heat and cook onions for about 30 minutes. Cut kale into thin strips. Add the onions to the pan and fry until lightly collapses. Season with salt and pepper.

Remove the sweet potato peel and puree it in a bowl with a potato masher. Chop sage and add to the sweet potato puree with the cream. Season again with salt and pepper.

Form pizza dough on a baking tray with baking paper to a round bottom and bake at 250 ° C for about 6-8 minutes in the oven. Then remove from the oven. Spread sweet potato puree evenly on the pizza base. Cover with cheese and kale and onion mix and bake in the oven for another 3-4 minutes until the cheese has melted.
