Ingredients
2 big carrots
1 medium sized zucchini
250 grams of tofu
3 tablespoons of sesame
3 tablespoons peanuts
1 spring onion
salt and pepper
oil
for the peanut sauce:
2 tablespoons peanut butter
2-3 tbsp balsamic vinegar
1 tablespoon of maple syrup (or rice syrup, honey, etc.)
1 tbsp lemon juice
Easy Rice Noodles with Peanut Sauce
Preparation
Cut the tofu into small pieces and fry with a little oil in a pan until it is slightly crispy. In the meantime, slice the carrots and zucchini into pegs or cut into small pieces. Also fry in a pan with a little oil. However, the vegetables should remain nice and firm. Briefly fry peanuts and sesame in a small pan and set aside.
For the sauce, mix the peanut butter, balsamic vinegar, maple syrup and lemon juice in a blender until a creamy sauce is formed. If the sauce is too thick, just add a little water.
Cook the rice noodles according to the package instructions. Meanwhile, cut the spring onion into small pieces.
Put the tofu, vegetables, spring onion, peanuts, sesame seeds and rice noodles in a large pan and mix with the peanut sauce. Salt, pepper and serve.
