Ingredients
(for a cake tin of 16 cm in diameter)

450 g of pitted cherries
90 g of whole wheat flour
20 g of almond flour
50 g of raw cane sugar 
50 g of extra virgin olive oil
1 teaspoon of grated ginger
juice of a lemon 

Method

1. Mix the whole wheat flour with the almond flour and 40 g of sugar. Add the oil, lemon juice and mix well.
2. In a well-oiled baking dish, make a first layer of dough, add the pitted cherries and mix with ginger, and cover with another layer of dough. Sprinkle with the remaining brown sugar.
3. Bake in preheated oven at 180 ° C for about 35 minutes.
