This is the name of the dish we have chosen for you; Buckwheat banana bread with apricots and chocolate.
Eating sweets without an ounce of sugar would be the dream of gluttons all over the world who, at the same time, have an eye for their health. If you are also in this category, there are very good news for you. To give up sugar does not mean to forget the sweet taste . This is demonstrated by the recipe of this banana bread, a sort of banana plumcake that exploits the sweet taste of this fruit to restore sweetness to the palate. The goodness of the banana bread is also ensured by the presence of dark chocolate, cinnamon and, in the version proposed here, apricots.
Moreover, this recipe is anti-waste because it allows you to use particularly mature bananas, even a little blackened, avoiding throwing them away.
1. Blend the bananas with oil, lemon juice and eggs.
2. Pour the mixture into a large enough container and add the flour, cinnamon and baking powder. Mix all ingredients well and add the diced apricots and chopped chocolate, then mix again.
3. Pour the mixture into a plumcake mold and bake in a preheated oven at 170 ° C for 40 minutes.
4. After the time has elapsed, check the cooking by inserting a wooden toothpick. If there are no traces of dough on the toothpick it means that cooking is perfect, otherwise it lasts another 5/8 minutes.
