There are many types of beans, today try the variety from the eye seasoned with this delicious meat sauce with avocado and many beautiful colored vegetables.
Preparation
After a 24-hour soaking with a bay leaf, rinse the beans, cook them (always with a bay leaf or other herbs) for 35/40 minutes, then drain them and keep them aside.
Cut all the vegetables and the avocado into small cubes, then mix with the chopped spring onion. Combine the beans and blend.
Season with a little salt, oil and chopped fresh coriander. Add a few drops of lemon and serve the beans at room temperature.
